Research project
"Needs-based sustainability assessment of seafood from fisheries"
Academic party: Rise
Co-applicants: Orkla Foods
The project involves mapping and comparing the various tools for evaluating sustainability that are available to industry players on the Swedish market. The work will also result in scientific advice on how the tools can be improved. The project is primarily linked to Blue Food's research area 5. Sustainability analyses.
Blue Food is funding the project with SEK 150 000.
The project is expected to be completed in the third quarter of 2023.
"Solid-phase fermentation of side streams from seaweed production"
Academic party: Rise
Co-applicants: Nordic Seafarm AB
The aim of the project is to evaluate the possibility of using side streams from the alga Saccharina latissima - attachments and "nerve" - as substrates for solid state fermentation, to perform protein analysis and to develop a method for future studies of amino acid composition, nutritional value, bioavailability, and sensory and environmental impact. In the long term, the project will enable sustainable and profitable value addition of currently unused side streams.
Blue Food is funding the project with SEK 150 000.
The project is completed, the results are available in the report Solid-state fermentation of side streams from Saccharina latissima from Rise.
