New report: Solid-state fermentation of side streams from Saccharina latissima

Side streams of the algae sugar kelp fermented with Rhizopous spores can be converted into a solid product that could potentially be used for human consumption. But first, more knowledge is needed about the taste and possible microbial and toxicological risks. More knowledge is also needed on the nutritional profile and bioavailability of the product. This is shown by a satellite project conducted by Rise in collaboration with Nordic Seafarm.
