New report: "Pacific oysters as a new food resource: A Blue Food satellite project"
Pacific oysters form clusters that could be used as a raw material for food. The invasive species could then be put in the mouth. But for that, both technology and markets need to be developed.
Researchers at IVL in collaboration with Musselfeed have investigated several methods for separating shell and meat, including heat and freeze treatment. They have produced oyster meal with good microbiological safety and nutritional value. The researchers have also reviewed the regulatory framework for using mussels in food and identified where the legislation needs to be clarified. Several important steps to be able to use a problem as a resource.
