New article: The link between food neophobia and sensory expectations investigated

Food neophobia - the unwillingness to try new dishes or foods - can affect sensory expectations of food. Researchers at Rise have investigated how food neophobia affects sensory expectations of five types of seafood: salmon, herring, oysters, squid and seaweed. Participants in the study were asked in an online questionnaire to indicate the extent to which they expected to like each food, the emotional activation the food would provide and how familiar they were with them. The higher the level of food neophobia, the greater the likelihood that visual impressions, aroma, taste and texture would be described as negative. It is therefore important to understand expectations before tasting.
