
New article: Broadly Sourced Alternative Proteins Alter Muscle Metabolome While Maintaining Sensory Quality in Rainbow Trout (Oncorhynchus mykiss)
Five fish feeds that could be used as alternatives to fishmeal and soy were evaluated to see how they affect the sensory quality of fish fillets and the metabolism of fish. The alternative feeds tested were based on the fungus P. variotii, blue mussels, American soldier flies, sea squirts, and mealworms—which are actually the larvae of the large mealworm beetle. The experiments were conducted with rainbow trout.
Small differences were observed in color, aroma, and a taste of root vegetables. Insect-based feed showed the most promising results in terms of both sensory quality and quality biomarkers, but all five feed types were still considered reasonable alternatives.
