Evangelia Zioga has defended her thesis and earned her doctorate
On 25 September, Evangelia Zioga, a Blue Food doctoral student, defended her thesis and was awarded her doctorate. In her dissertation, Taste-Sea: sea vegetables with enhanced flavor for future sustainable foods, she explored how fermentation can contribute to the processing and use of algae as a food resource.
In her doctoral thesis, Evangelia Zioga demonstrates how fermentation can contribute to the stabilization of biomass, the development of flavour, and changes in nutritional properties, while also highlighting trade-offs and current limitations—key building blocks for developing fermentation as a strategy to enable the use of seaweed as a versatile food ingredient.
Evangelia Zioga completed her doctoral studies at both KTH and DTU in Denmark. This means she will receive a dual doctoral degree. But it also meant that, after presenting her dissertation and answering questions from the opponent and KTH’s decision committee, she faced another round of questions from DTU’s decision committee. It was, therefore, an unusually extensive defense—one that Evangelia Zioga handled exceptionally well.
Warm congratulations to Evangelia Zioga on her doctoral degree, and best of luck in her future research career!
